The Farmboys BBQ Story

Hi there,  Stacey & Matt Lombardo here…of Farmboys Smokin’ BBQ.  

We finally wanted to share our story

Farmboys Smokin’ BBQ officially started in November of 2012.  Matt Lombardo, of Charleston SC, has been cooking southern-style smoked BBQ for decades.  We started off with a smoker with wood chips on our home grill.  We then upgraded to our first Lang 84 ft Deluxe Smoker in the fall of 2012.  We happened to buy that smoker from a man named Mike Lee, a BBQ caterer and KCBS champion who showed us the ropes of the smoker, some great tips and we also gained a long-term friend! Shortly after, we had our first event at a local bar in Danbury CT called Michaels II Cafe.  We gave them some BBQ samples & they gave us a chance! (Little did we know that a decade later, this exact location would be the home of our very first brick-n’-mortar BBQ restaurant!)

Next, we started our website ( http://www.farmboyssmokinbbq.com ) & our BBQ catering business just started growing!  By June of 2013 we had almost every weekend booked through October!  Matt perfected the homemade sauces, spent his spare time studying various BBQ recipe books, etc.  He didn’t sleep much that summer!  (When you have a  20 hour brisket cooking and then an event the next day, there’s not much time for rest.) Our family helped us out with lots of catering events, especially those first busy summers. Meanwhile, I, Stacey had been in grad school, studying to become a nurse practitioner (yes, slightly different field but we would go crazy if we worked together all the time!)

In the meantime, we started going to different breweries in CT as a food truck and we started to gain a following there too. We got to serve our BBQ literally right out of the smoker.

In 2013 and 2014 we had the chance to compete nationally in the KCBS and NEBS competitions. We were honored to be awarded Reserve Grand Champs.

Okay now fast forward to 2021. The pandemic is in full swing. Micheals II Cafe has moved to their new and current location on Stony Hill Rd in Bethel called Michael’s Tap Room. The building where it all began was available and we knew he had to have it! We had never run a restaurant before…. but we were about to learn. Some trial by fire… but none the less! We were going for it! P.s. Thank you to Chris S & Chris B for all your help with getting this place ready for opening day!

During the month of April 2022, we had a few soft opening events as we started to learn our new workflow with our new team. By May 2022 we kicked off our official opening during the Kentucky Derby, which is one of Matt’s favorite events!

Now here we are, almost 14 years after we started…. 2 years into opening the restaurant…. We’re still learning…. still growing… still enjoying the journey! Thank you to our friends, families and loyal customers for all your help and support! Its certainly no easy task to open and run a restaurant and every day has its unique challenges. We’re far from perfect but we’re happy to be here! We couldn’t have done this without you!

BBQ & Beer…is there anything better?  Okay maybe just a few things…but its definitely way up there!! 😉  We’re happy to announce that now not only is our BBQ available for catering parties and weddings, but now you’re able to purchase our BBQ almost any week!  We’re still serving at Two Roads in Stratford about twice a month, usually on Sundays! We’ve also teamed up with a few more local breweries in CT so we’ll be much more easily accessible!

Now please keep in mind, it is possible we may sell out of food some nights.  We pride ourselves in serving the freshest foods smoked right on site.  With that being said, it’s not always easy to estimate the exact amount of food needed per night.  We do however often donate leftovers to a local food kitchen in Danbury!

Our ‘food truck’ menu will generally consist of smoked pulled pork, smoked mac & cheese and coleslaw.  We sometimes also make beef brisket, chicken, ribs, etc. depending on the night.  We generally keep our Facebook page http://www.facebook.com/farmboysbbq up to date as well as our ‘public events’ page on our website: www.farmboyssmokinbbq.com

Our First BBQ Blog

Hi there,  Stacey & Matt Lombardo here…of Farmboys Smokin’ BBQ.  We decided to add a blog to our website to keep you updated on our Que!

For those of you who are new to Farmboys, here’s a little history……

Shortly after that, Stacey (me), also an RN when not BBQing, starting looking into legalities and licensing.  We obtained various health dept licenses after writing tons of policies, finding a kitchen, etc.  (Thank god I’m a nurse & I’m familiar with various hand-washing and safety policies!)

Forgot to mention,  OMNOM CT interviewed us and wrote the first of many amazing articles about us!! They definitely helped to get us off the ground!

Farmboys Smokin’ BBQ Catering Bringin’ a ‘Lil Bit ‘o Memphis to CT

We catered for them multiple times in 2013 & we were honored to be voted BEST BBQ of Fairfield County of 2013 by their Blog!!!

 

During the summer of 2013, we teamed up with Two Roads Brewing Co in Stratford & started selling BBQ as a food truck!  We now have a ‘fan base’ on Facebook who comes to our events!  Such an honor to have such a great following…Great ppl too!  (We’re talking about you Darryl, Jim, Vic, Theresa, Barbara, Kevin, Jennifer..sorry if I missed a few of you; I’m bad with remembering names!  If I forgot you, we still love & appreciate you! I promise!)

In the spring of 2014, we entered our first BBQ competition with the help of Mike Lee & daughter!  He helped us win ‘Reserve Grand Champs’ (2nd place) in the NEBS competition and 5th place in chicken in the KCBS competition!

Now in June of 2014, we are busier then ever.  (June is kind of the prime time for catering..especially BBQ!)  We have just taken a trip to Tennessee to do some research on Memphis-style BBQ, since that’s what we do!  (See our Facebook page for pics!)  The people there are great!  One of the chefs at Flynn’s showed us the smoker!  The owner at Blue’s City Cafe came to sit down & chat with us and shared some BBQ tips!  So much fun!  Although, I have to admit, I don’t want to smell or see BBQ for a very long time…………oh wait! Just kidding! 😉

 

Anyways, glad to have you all enjoy our BBQ!  We’re constantly listening to feedback & improve as needed!  We enjoy talking BBQ so if you come to our events feel free to come hang out with Matt & talk Que!
